Pink Grapefruit Curd Cupcakes - Guest Post from Galina at Chez Maximka

Another guest post whilst I’m sunning-it-up in Fuerteventura (I’d so love to tell you I’m missing my laptop but my absence from Facebook speaks volumes!) from the very talented Galina from Chez Maximka. How this woman does it, I’ll never know. She has two perfect little guys (11 and 3). But life is far from ordinary as her eldest is autistic. She loves to involve her boys in cooking and does a fabulous job making us all salivate over our laptops! To top it all off, we’re modelling Dexter’s hair on her boys… wish us luck as we’ve some way to go!

When the weather is miserable, I turn to baking cupcakes. It is a therapeutic process and a fun family time. Are you feeling stressed? How about baking a batch of lovely Pink Grapefruit Curd Cupcakes?

Ingredients:
2 eggs
150g caster sugar
250g plain four
1tsp baking powder
50g ground almonds
zest and juice of 1 lemon
zest and juice of 1 orange
150ml Greek yogurt (for example, Chobani plain yogurt)
4tsbp grapefruit curd
100g butter, melted
4+tbsp pine nuts (as a topping)

Making It!

  • Beat the eggs together with the caster sugar. Add the flour, baking powder and ground almonds and mix well
  • Zest the orange and lemon and squeeze the juice from each fruit. Add the zest and juice to the mixing bowl, as well as the yogurt, grapefruit curd and melted butter. Mix well again
  • Spoon the mix into the paper cupcake cases and sprinkle the pine nuts on top.
  • Place the muffin tin with the cupcakes in the oven preheated to 180C. Bake for about 20 minutes, until they are golden brown.
  • If you cannot find the grapefruit curd, a lemon or an orange curd will be a perfectly good substitute.
I used the English Provender Limited Edition Royal Pink Grapefruit Curd which was created last summer to celebrate the birth of the Royal baby. It is a lovely curd, smooth and fruity, perhaps a bit too sweet (I prefer a tangier flavour in curds, with a sour note). It would also look very pretty with meringues or as a filling for macaroons.
